Purple Sprouting Broccoli
At it’s best between now and April, purple sprouting broccoli is high in vitamin C. When cooked it will add lots of nutty flavour to your dish.
To keep it’s purple colour, it’s best to griddle, gill or quickly stir fry and keep it simple with just a sprinkle of sea salt and a squeeze of lemon!

Bergamot
This is no ordinary lemon – unlike other citrus fruits, this one cannot be eaten fresh, but as an ingredient is extremely versatile.
Packed with flavour and bursting with juice, this is a definite ingredient to experiment with this weekend.
It can perfume a rice dish beautifully, complements fish, adds flavour to cakes and biscuits… the list goes on! Or make the perfect roast chicken; not only will the bergamot zest enhance the chicken flavour, but the juice will also help the chicken shine.

Monk's Beard (Agretti)
Grown in Tuscany, Monk’s Beard is rich in vitamin A and has a good source of vitamin C as well as being a natural antioxidant. Best steamed (or blanched – not raw), this is the perfect addition to your fish or pasta dish this weekend.
Simply chop the blanched veg into bite size pieces, and sauté with extra virgin olive oil and shallots. You could add an egg for a simple but delicious frittata or just add to your spaghetti.
Did you know…
Monk’s Beard is thought to have got its name from the history of how it was harvested. Cultivated by the Capuchin (or Cappuccino) Monks, it quickly became a favourite ingredient in Italian cuisine, with locals having to queue up to get a bunch.

Broccoli Fiolaro - delicious broccoli from Italy available in our shop.
Simply simmer for 5 minutes in salted water. Drain and add minced garlic and then sautee in extra virgin olive oil for a couple of minutes. Serve and dress with a squeeze of lemon, to taste. It got a big thumbs from the staff today ππ
Did you know…
Fiolaro is an Italian type of broccoli grown in the Creazzo Hills in Northeastern Italy during late Autumn and winter. It does not have the typical taste or shape of other varieties of broccoli and is rich in vitamins, mineral salts and calcium

Yorkshire rhubarb - did you know…
Rhubarb is not a fruit at all, it’s actually a vegetable!
Classed as a superfood, rhubarb is rich in calcium, fibre, magnesium, iron and vitamins C, B2, B3 – only 7 calories per 100g!
It’s good for the palate and the body, so why not add this to your menu!
For those wanting a bit of history, read on…
Yorkshire rhubarb is produced on suitable soils between Leeds, Wakefield, and Bradford, which became known as ‘The Rhubarb Triangle’ – the location giving perfect growing conditions.
Legend has it, back in 1817, someone growing it at Chelsea Physic Garden, accidently left an upturned bucket on top of one of the plants. Struggling to get light, the rhubarb produced long, thin stems and small pale leaves. Someone tried it and the flavour was so exquisite, this accident soon became a technique, known now as ‘forcing’.
The growing process can take up to three years, initially being grown outdoors and subjected to several frosts, the plants are then moved indoors in winter to grow in the dark. This causes the rhubarb to grow at an accelerated rate in light-free hothouses and harvesting is carried out by candlelight to preserve younger stems, which are still growing. The candlelight not only aids the workers but the rhubarb, so desperate for light, ‘force’ their way up out of their earthy nest at the glimmer of even the faintest of light.
